preparation:

• wash the product carefully and soak it in cold water for about 8 hours

• replace the water and put on fire, bring to boil and continue cooking at low heat for about 90 minutes (30 minutes is enough in a pressure cooker)
• add salt near the end of cooking to prevent the product from hardening
